What is everyone doing to stay sane these days? I’ve been spending as much time outside as I possibly can. That means daily walks, outdoor projects, or just eating my meals on our porch. I’ve also been experimenting in the kitchen. I am a typical quarantine cliche and now have a sourdough starter who goes by Miranda Sue.

I’m also consuming copious amounts of canned coconut milk. For its health benefits and because we stocked up on the stuff. It’s a great pantry staple due to its versatility. With so much coconut milk on hand, I stumbled upon creating this Blueberry Coconut Milk Smoothie.The smoothie consists of three ingredients coconut milk, frozen blueberries, and honey. It might sound simple, but it packs a punch in the way of taste, texture, and nutrition.

Coconut milk is the key ingredient in the Blueberry Coconut Milk Smoothie. Please do not substitute any other alternative milks, or you will not get the same effect.

Ingredients:

  • 1 can full-fat coconut milk
  • 2 cups frozen blueberries
  • 1 tbs.  honey
Optional add-ins
  • 1-2 scoops collagen powder
  • ½ inch fresh ginger
  • Turmeric root or powder

Instructions:

How to cook Blueberry Coconut Milk Smoothie

  1. Place blueberries, coconut milk, and honey in a high powered blender. Blender on high until everything is smooth and blended. Pour into two glasses and enjoy!

Notes:

A high powered blender will better break up the blueberry seeds and create a smooth creamy consistency.
