Instant Pot Taco Soup

This five-ingredient Taco soup comes together in a flash. All you do is dump everything into your instant pot and cook for 12 minutes on high pressure. This soup isn’t anything special, but it checks the box for an easy weeknight dinner!

It’s soup season and my motivation to cook is back! Thank goodness, because I was beginning to question who I was for a minute. So if you too are ready to get back in the kitchen but are still wanting to keep it fairly easy, I’ve got you! This Instant Pot Taco Soup is simple, but oh so delicious. Made of only five ingredients and no prep work. I love having this soup in my repertoire for a quick, nourishing meal!

Easy Taco Soup Ingredients

No need to overly complicate things. The appeal of this soup is in its ease. You probably already have most of these ingredients hanging around your kitchen, and if you don’t you totally should. The one thing this pandemic has taught us all is the importance of having a well-stocked kitchen, so I highly suggest you start adding these staples to your grocery list.

  • Bone broth (chicken, beef, or pork)

  • Black beans

  • Crushed tomatoes 

  • Ground beef

  • Taco seasoning

If you didn’t know, I religiously use bone broth in my kitchen. Every two weeks I make a batch of it in my instant pot and store half in the freezer and keep half in the fridge. Do not skimp and use broth from a carton. Your soup will taste richer, deeper, and more flavorful when using bone broth. You can make your own, or you can bone broth at most health food stores.

How to make taco soup in an instant pot

Normally when cooking, I would start by sauteing an onion and browning the ground beef, but this recipe is for lazy days or nights when you don’t want to hold a knife and need to put food on the table. Literally, throw all of the ingredients into your instant pot, put the lid on, and pressure cook for 12 minutes if you are using frozen ground beef. Release the steam once it is done cooking and season with salt to your liking. You can make it fancier with some garnishes, or you can enjoy it on its own!
